The life of our wines begins even before the first bud appears on the vine. Life for our vintages begins with a marriage of soil, climate, and topography known simply as terroir. Many vines can grow from the Russian River Valley and Sonoma Coast terroir, but only our Chardonnay and Pinot Noir can truly flourish and provide our signature wines with this individual provenance.
Like our terroir and locale, the harvest process at Sonoma-Cutrer vineyards is as unique as the flavors produced by our master artisans. Our harvests take place at night or in the early morning hours, when the cool temperatures take over the heat of the sun. A true blend of tradition and innovation, the grapes are hand picked before entering a modern cooling tunnel.
This one-of-a-kind cooling tunnel holds the grapes at a consistent temperature of 50°F which preserves a natural acidity and reduces oxidation. After passing through the tunnel, the grapes are again hand sorted to ensure quality before pressing. In order to avoid bitter tannins found in grape skins, stems and seeds, our fruits are pressed slowly, and as a whole cluster. Juice is allowed to settle naturally for at least 24 hours and yeast is added before being housed in French oak barrels to finish the maturation process.
Strong relationships are the pillar of sustainable winemaking practices. Our artisans have worked with the same foresters and tonnelleries for more than 30 years. To this day, they welcome us to France to walk through the forest where our barrels begin their journey. Built to exacting specifications from select trees, each barrel is the work of a master-craftsman.
The Chardonnay barrel room is a 20,000 ft² facility dug into a hillside and is designed to replicate a French cave - complete with a bare earth floor. Temperature-controlled water flows through 24 miles of piping to create the consistent temperature and humidity needed for a slow, controlled maturation process, reminiscent of the Old World philosophy.
The Pinot Barn is nestled in The Cutrer vineyard.
Our Pinot grapes are harvested and sorted by hand.
Grape clusters are de-stemmed and gravity fed to small, open-top fermenters.
The Wine is sealed in small, French oak barrels where it will spend 9-14 months aging on its lees.
